Alpaca is nickel silver. Usually 60% copper 20% nickel and 20% zinc

I've always heard that the first water introduced to the mate should be around 50 -- 60 C so as to "temper" the leaf and open it up gradually. Allegedly, this also helps to preserve the mate's nutrients before the introduction of warmer water. Thoughts?

Actually, I notice that mate with the stems in it (sin palo) is typically less bitter and more mild tasting than the pure leaf stuff (con palo). I don't think any of the health benefits of mate are any less just because there are stems in the mate (or not). Its just a different flavor, and not any sort of "filler" or imperfection or cheapening of the mate. For mates that have an intensely smokey flavor (Rosemonte Especial comes to mind), the stems retain that flavor much more between brews than the leaves do.

Great job! Así lo preparamos acá, y Canarias es la mejor yerba, si a alguien le parece muy fuerte pueden probar con Canarita que es un poco más suave, pero es la mejor marca
